Ice Cream Sandwich

A classic commercially prepared ice cream dessert comprised of vanilla ice cream sandwiched between two thin, somewhat soft (some say cake-like) chocolate cookies. They are sometimes rectangles, as shown in the photo, but also come round and square. The cookies almost always feature the holes made from docking the dough before baking (which helps to keep them nice and flat). August 2nd is National Ice Cream Sandwich Day, so make sure to indulge.
